What is the difference between these two tabbed items?

"Notes" are connected with a chapter or verse of Scripture. (Look for the little box to un/check Chapter at the top of the tab.)
Editor is not connected directly with any particular passage.

So, if you want to accumulate passages or make notes about a topic, use the Editor.

If you want to comment on a verse or chapter, use Notes.

I notice with the EDITOR tab the title is "unnamed". When does that get named and if it is possible, how do you name it?
I apologize for the "rookie" questions.

Rookie questions are not a problem! You name an Editor document when you save it. Note that you can save it anywhere you want on your computer, in a BibleWorks subfolder or elsewhere; and that it will be saved as an RTF document that can be opened in other programs.
